Introducing our first Member of the Sixty Seconds Over Collective – Rodrigo Alvarez. Rooted in the vibrant world of Mexican cuisine and family traditions, Rodrigo’s early love for tamales shapes his culinary creations at Tak-O. Here, he bridges Mexican and Danish flavors, showcasing how food unites and inspires, transporting us to cherished memories and new experiences.

Can you describe your early experiences with Mexican cuisine? What is your favorite dish from childhood? What sensation do you feel when you think of your childhood meals?

   

 My early experiences with Mexican cuisine were deeply rooted in family gatherings and traditional celebrations. The vibrant colors, rich flavors, and diverse textures of Mexican food were a constant presence in my life. My favorite dish from childhood is undoubtedly tamales. The sensation I feel when I think of my childhood meals is one of warmth and comfort, a blend of familial love and cultural heritage.

 

How did your family influence your love for cooking?

 

 My family played a pivotal role in my love for cooking. Growing up, the kitchen was the heart of our home, where we would gather to cook, eat, and share stories. My parents and grandparents taught me the importance of using fresh, local ingredients and passed down traditional recipes that had been in our family for generations. Their passion for food and dedication to preserving our culinary traditions inspired me to pursue cooking as both a profession and an art form.

 

It was very interesting how you described food as “art.” Can you let us know how food is connected to art and do you feel like you paint a picture of Mexico to the person you cook?

 

 Food is an art form because it involves creativity, skill, and a deep understanding of ingredients and techniques. Each dish is a canvas where flavors, colors, and textures come together to create something unique and expressive. When I cook, I aim to paint a picture of Mexico for my guests, showcasing the richness and diversity of our cuisine. Every dish tells a story, and through my food, I strive to share the essence of Mexican culture and traditions.

 

Can you give us an example of the eye-opening contrast between Mexico and Denmark once you moved in? Something that really shook your core. Could be in a positive way.

 

 One of the most striking contrasts between Mexico and Denmark is the climate and its impact on daily life and cuisine. Moving from the warm, sunny weather of Mexico to the colder, more temperate climate of Denmark was a significant adjustment. This change influenced not only my personal lifestyle but also the way I approached cooking. In Denmark, there is a strong emphasis on seasonal ingredients and preserving foods to last through the long winters, which was a new concept for me. This experience broadened my culinary perspective and taught me to appreciate the different ways cultures adapt their cuisines to their environments.

When you say missing the smell and taste of home, what is it that you actually miss? With what smell and taste do you associate home?

 

 When I say I miss the smell and taste of home, I am referring to the distinct and comforting aromas of traditional Mexican dishes. The scent of fresh cilantro, the smoky aroma of roasted chiles, and the earthy fragrance of homemade tortillas are some of the smells I associate with home. The taste of a perfectly balanced mole sauce, the tanginess of freshly squeezed lime, and the spiciness of a well-made salsa are flavors that instantly transport me back to my childhood and family gatherings.

 

How important is it to you to use traditional ingredients? Do you source your ingredients directly from Mexico or do you use Danish ingredients to prepare your dishes?

 

 Using traditional ingredients is incredibly important to me because they are essential to achieving the authentic flavors of Mexican cuisine. Whenever possible, I source ingredients directly from Mexico, such as dried chiles, spices, and specialty items that are hard to find elsewhere. However, I also believe in making the best use of locally available ingredients in Denmark. By combining traditional Mexican ingredients with high-quality Danish produce, I can create dishes that honor my roots while also embracing the local culture.

 

How did you go about sourcing traditional Mexican ingredients and developing recipes that would appeal to Danish tastes?

 

 Sourcing traditional Mexican ingredients in Denmark was initially a challenge, but I found specialized suppliers and online stores that import authentic Mexican products. Developing recipes that would appeal to Danish tastes involved a lot of experimentation and adaptation. I focused on balancing traditional Mexican flavors with ingredients and cooking methods familiar to Danish palates. This approach allowed me to create dishes that were both authentic and accessible to my new audience.

How does Tak-O serve as a bridge between Mexican and Danish cultures, and what have you learned from this cultural exchange?

 

 Tak-O serves as a bridge between Mexican and Danish cultures by bringing the vibrant flavors and traditions of Mexican cuisine to Denmark. Through my food, I aim to create a sense of connection and understanding between these two diverse cultures. This cultural exchange has taught me the importance of adaptability and innovation in the culinary world. It has also deepened my appreciation for both Mexican and Danish culinary traditions and the unique ways they can complement each other.

 

Do you have an example of a wholesome interaction between you and a client?

 

 One memorable interaction was with a Danish family who had recently visited Mexico and fell in love with the cuisine. They came to Tak-O to relive their culinary experiences and were thrilled to find authentic Mexican flavors in Denmark. Their enthusiasm and gratitude reminded me of the power of food to create lasting memories and bring people together, even across continents.


 

Why is it important to you to honor your roots?

 

 Honoring my roots is important to me because it keeps me connected to my heritage and the traditions that have shaped me. It allows me to share a part of my identity with others and preserve the rich culinary history of Mexico. By staying true to my roots, I can offer an authentic experience to my guests and contribute to the cultural diversity of the culinary world.
